The Hofherr family country butchery business and village shop have been providing fresh meat and sausage products in Königsdorf for 4 generations. A top quality feast for the palate for those living in Königsdorf and for our guests in the Hotel Hofherr! For our regional specialities, we purchase cattle from farms close to the hotel and process these in our own slaughterhouse. The high demands we make for the keeping and the transport of the animals, together with our traditional production, results in meat of outstanding quality and well matured meat specialities. The Hofherr family name acts as the guarantee for the production of traditional Bavarian and other sausages, because for the last 4 generations the butchery business has been under the control of a master butcher from our family. So if on your next visit you have for instance eaten an excellent pair of Schweinswürstl (pork sausages), or Wiener, Pfälzer, Weißwürst sausage, an outstanding cold meats platter or sausage salad and enjoyed it, which we assume will be the case, you will know the reason for its excellence. And don’t forget to take some sausages from the butchery business back for your next barbecue. The range of products has been refined and extended, for example with Käsedampfwurst (scalded cheese sausage), Krakauer (cured pork sausage), Schmankerltopf (pot of meat treats), Gutshofleberwurst (farm liver sausage) and much more. We have also extended our offer of hot Brotzeit snacks, such as for example schnitzel, Bratwurst (fried sausage) etc.

In our butchery course, beginners and professionals learn the first steps and elementary principles of the butcher’s trade. After a warm welcome and after assuming correct clothing according to the hygiene rules, master butcher Uli Hofherr will demonstrate his skills in producing traditional and authentic specialities such as home-made Weißwurst from the Hofherr butchery business. When cutting up the carcass, all the parts are named and described exactly as to how and for which dishes they are used. Finally we move on to tasting the sausage products we have made.
